This dish is the perfect recipe to put your freshly homegrown tomatoes and basil to use. Use your favorite seafood, it’s great with all seafood. To create a healthy balanced plate, serve with roasted potatoes and fresh arugula.

Ingredients

Fish
  • 4 each Fresh Catch (~4 ounces)
Spice Rub
  • 1 tablespoon Garlic powder
  • 1 tablespoon Dried basil
  • 1 teaspoon Fennel seeds
  • ¼ teaspoon Crushed red pepper flakes
  • ½ teaspoon Salt
  • 1 teaspoon Lemon pepper
Salsa
  • ¼ cup Kalamata olives, pitted, quartered
  • 1 cup Tomatoes, diced
  • ¼ cup Basil, chopped
  • 3 each Garlic cloves, minced
  • ¼ teaspoon Crushed red pepper flakes
  • 2 tablespoons Olive oil, divided
  • 1 each Lemon, juiced

Instructions

  1. Preheat the oven to 400° F.
  2. To make the spice rub combine, garlic powder, basil, fennel, red pepper flakes, salt, and lemon pepper.
  3. Generously sprinkle both sides of each filet with the spice rub.
  4. To prepare the salsa, combine olives, tomatoes, basil, garlic, red pepper flakes, 1 tablespoon of oil, and lemon juice.
  5. Preheat a large sauté pan to medium-high heat. Add 1 tablespoon of oil. Place fish filets into the warmed sauté pan and sear the filets until caramelized and firm to touch, about 3-4 minutes per side, flip and repeat.
  6. For thicker pieces of fish, finish cooking the fish in the oven at 400° F. for 6-8 minutes or until the internal temperature reaches 140° F.
  7. Serve about ¼ cup of Sicilian-style salsa over each fish filet.
