Ingredients

  • 1 box Spice cake mix
  • 1 can (15 oz.) Pumpkin puree
  • 1/2 cup Applesauce, unsweetened
  • 1/2 tablespoon Ground cinnamon
  • 1/2 cup Simple Mills Vanilla frosting
  • 12 ounces White chocolate chips (1 package)
  • 1 teaspoon Coconut oil

Instructions

  1. Preheat oven to 350 degrees.
  2. In a mixing bowl combine, pumpkin and applesauce until combined.
  3. Next, mix in cake mix and cinnamon.
  4. Line muffin pan with muffin liners.
  5. Scoop 1/4 cup of batter into each liner. (If it’s easier, pour batter into a cake pan and bake.)
  6. Bake for 20-25 minutes or until the cake has set.
  7. Remove from oven and cool.
  8. Once the cake has cooled, break it into pieces and crumble it into a large bowl.
  9. Add the frosting and mix the crumbs into it until you have a 'dough'. (I find it is easiest to just use my hands for this or a stand mixer.) The dough should hold shape. If it’s too dry and crumbly add more frosting little by little. Avoid a “wet” texture.
  10. Using a cookie dough scoop, or a spoon, scoop about 1/2 ounce (1 tablespoon) of the dough, roll it into balls, and place on a plate or baking sheet.
  11. Melt 1/4 cup of the white chocolate chips in the microwave 30 seconds at a time until smooth and melted, then dip the ends of the cake pop sticks in the white chocolate and insert about halfway into the cake pops.
  12. Place the cake pops in the freezer for at least 30 minutes to better set the shape and the chocolate hardens.
  13. Next, melt the rest of the white chocolate chips with coconut oil in microwave. Melt for :60 then stir, if more time is necessary, melt in :30 increments.
  14. Remove the cake pops from the freezer and dip each into the melted white chocolate. Place back on a parchment paper lined baking sheet.
  15. Decorate with sprinkles or toppings immediately (if desired), before the white chocolate hardens.
