White Bean Spinach & Artichoke Dip

This delicious dip is bright, flavorful, and good for you. Skip all of the necessary saturated fat in traditional spinach and artichoke and dial up your health with this tasty bean-based dip.
Ingredients
- 1 can (15 ounce) Cannellini beans, rinsed and drained
- 15 ounces Artichoke hearts, frozen or canned, chopped, divided
- 1 each Lemon, zested and juiced
- 1/4 teaspoon Crushed red pepper flakes
- 1 cup Spinach
- 2 each Garlic cloves
- 1/4 cup Extra virgin olive oil
- 1/2 teaspoon Salt
- To taste Ground black pepper
Instructions
- Place the beans, 1/2 of the artichoke hearts, lemon zest, lemon juice, garlic, and red pepper flakes in a food processor and process until fairly smooth.
- With the motor still running, slowly drizzle in the olive oil.
- Add fresh spinach, and pulse until just minced. Taste and season with salt and pepper as needed.
- Serve with carrots, celery, and crackers.
- Garnish with chives.
