Single Serving Protein Chocolate Mug Cake

Warm, rich, indulgent chocolate cake… everyday? YEEES. Okay, I am all about living a healthy lifestyle, I love feeling great, performing well in the gym, sleeping well, and just living life. I am also a HUGE fan of living a healthy lifestyle while still doing the things you love. Well, I love sweets! I love warm chocolate cake with a bit of ice cream. So here we are, I am just over here living my best life, eating chocolate cake everyday and feeling really good about it.

I loaded this single serving cake up with chocolate protein powder using Active Stacks protein. I find the flavor to be the best of all the protein powders I have tried, but experiment with what you already have. Also, kodiak cakes are so great, they are high in protein, fiber, and taste good. I added a little sweetness with xylitol. Xylitol is a sugar alcohol, it is a natural sugar alcohol found in plants. It doesn’t absorb in our intestines therefore, the body absorbs minimal calories from it. It is the sweetener that most sugar-free gum, toothpaste, and cough drops contain. It’s best to keep consumption of sugar alcohols low, too much on a daily basis can cause temporary GI discomfort. However, in moderation, xylitol is a great option for adding a bit of sweetness.

I like to microwave the cake just until it’s almost done, where there is a little bit of a fudge center. But you do you. Lastly, top it with 1/4 cup of slow churn vanilla ice cream, your soul will sing!

This is the perfect mid-day, late-night treat that is high in protein, low in sugar, and will keep you on track with your healthy lifestyle. Warm chocolatey goodness topped with ice cream? Yeees, puh-lease.

Ingredients

  • 1 tablespoon Cocoa powder
  • 25 grams Chocolate protein powder (Active Stacks is my current favorite)
  • 1/4 cup Kodiak cake chocolate pancake mix
  • 1 tablespoon Xylitol
  • 1/3 cup 2% Milk

Instructions

  1. Lightly grease a microwave-safe bowl.
  2. Combine all ingredients.
  3. Pour ingredients into a lightly greased dish.
  4. Microwave on power level 7 for 1 minute.
  5. Serve warm, top with slow churn vanilla ice cream and/or fresh berries.
