Healthy Breakfast Sandwich

Ingredients
- 6 each Whole wheat English muffins (Dave's Killer is my fav)
- 6 tablespoons Raspberry jam
- 9 ounces Sliced ham
- 6 slices Provolone
- 1 1/2 cups Spinach
- Egg whites:
- 2 cups Egg whites
- 2 tablespoons Everything but the bagel seasoning
Instructions
- Preheat oven to 350 degrees.
- To prepare the egg white cups, lightly grease a muffin pan or silicone mold. Pour 1/3 cup of egg whites into 6 muffin slots.
- Sprinkle 1 teaspoon of everything but the bagel seasoning on top of raw egg whites.
- Bake for 16-18 minutes.
- Remove from oven and allow to cool.
- To build the sandwiches; spread 1 tablespoon of jam on bottom piece of English muffin, top with 1.5 ounces of ham, spinach, cheese, and cooked egg white cup, top with other half of English muffin.
- Wrap in aluminum foil. (Make all 6 at once for easy mornings!)
- Pop wrapped sandwich in the oven for 20 minutes, or until the cheese is melted and the sandwich is warmed through.
