Spinach & Artichoke Dip
Ingredients
- 1 tablespoon Olive oil
- 1 each Onion, yellow, diced
- ¼ cup Garlic, minced
- 1 teaspoon Salt
- ½ teaspoon Ground black pepper
- 6 ounces Spinach
- 12-ounce jar Artichokes, canned, drained, quartered
- 8 ounces Reduced fat cream cheese
- ½ cup Greek yogurt, plain, non-fat
- 1 cup (divided) Mozzarella, shredded
- ½ cup Parmesan, shredded
Instructions
- Preheat oven to 400° F.
- Warm a sauté pan to medium heat and add olive oil.
- Add onion, garlic, salt, and pepper. Sauté for about 5-8 minutes stirring occasionally or until the onions have softened.
- Add in the spinach and cover with a lid to steam just until the spinach wilts.
- Turn the heat off, remove the lid, and stir in cream cheese breaking it apart until it melts. Stir in yogurt until combined.
- Stir in artichoke hearts, ½ cup of mozzarella, and parmesan cheese.
- Transfer dip into a greased 9x9 oven-safe dish, top with remaining ½ cup of mozzarella cheese, and bake for 25 minutes or until golden brown.
Notes
If you have a cast iron skillet, use it from beginning to end, making this recipe and clean-up even easier. Serve with tortilla chips, veggie sticks, or crackers.
