This dip is creamy, cheesy, and easy to make! This dip is loaded with healthy vegetables and folded with creamy cheese and yogurt for your soul. It's the perfect crowd-pleasing app!

Ingredients

  • 1 tablespoon Olive oil
  • 1 each Onion, yellow, diced
  • ¼ cup Garlic, minced
  • 1 teaspoon Salt
  • ½ teaspoon Ground black pepper
  • 6 ounces Spinach
  • 12-ounce jar Artichokes, canned, drained, quartered
  • 8 ounces Reduced fat cream cheese
  • ½ cup Greek yogurt, plain, non-fat
  • 1 cup (divided) Mozzarella, shredded
  • ½ cup Parmesan, shredded

Instructions

  1. Preheat oven to 400° F.
  2. Warm a sauté pan to medium heat and add olive oil.
  3. Add onion, garlic, salt, and pepper. Sauté for about 5-8 minutes stirring occasionally or until the onions have softened.
  4. Add in the spinach and cover with a lid to steam just until the spinach wilts.
  5. Turn the heat off, remove the lid, and stir in cream cheese breaking it apart until it melts. Stir in yogurt until combined.
  6. Stir in artichoke hearts, ½ cup of mozzarella, and parmesan cheese.
  7. Transfer dip into a greased 9x9 oven-safe dish, top with remaining ½ cup of mozzarella cheese, and bake for 25 minutes or until golden brown.

Notes

If you have a cast iron skillet, use it from beginning to end, making this recipe and clean-up even easier. Serve with tortilla chips, veggie sticks, or crackers.
