This is the perfect dish to add to your summer meal rotation. Mix it up by using different seafood; shrimp, grouper, mahi mahi, or tuna. For a balanced dish serve this salmon with roasted green beans and steamed coconut rice.

Ingredients

Chili Rubbed Salmon
  • 1 teaspoon Oil, grapeseed or avocado
  • 4 (5 oz.) Salmon filets
  • 1 tablespoon Chili powder
  • 1 teaspoon Garlic powder
  • 1 teaspoon Cumin
  • 1/2 teaspoon Salt
  • 1/8 teaspoon Black pepper, ground
Pineapple Salsa
  • 1 cup Pineapple, small dice
  • 1/4 cup Red bell pepper, small dice
  • 1/4 cup Red onion, small dice
  • 2 tablespoons Cilantro, minced
  • 1 each Lime, juiced
  • To taste Salt + ground black pepper

Instructions

  1. Preheat grill to medium-high heat.
  2. In a small bowl combine seasoning, chili powder, garlic powder, cumin, salt, and pepper. Season salmon liberally on both sides.
  3. Once the grill is preheated (~400-450 degrees), lightly grease the grill grates with oil. Then, place seasoned salmon and sear on one side for 4-6 minutes then flip and repeat. Continue to grill the salmon until it easily comes off the grill grates, and the internal temperature reaches ~135-145 degrees.
  4. To prepare the salsa, combine all prepped ingredients in a bowl.
  5. Remove perfectly cooked salmon from the grill and top with prepared pineapple salsa.
